Baking a squishy warm banana bread

It’s a real luxury nowadays to be able to take your time with anything. In this, I recognise my significant privilege. There are places in the world where everyday is a work day, and a tough work day at that. There are people working 3 jobs to pay the bills. I am so fortunate to have a regular 9-5 job and have weekends to slow down. After I finished my Masters degree last year, I struggled to turn off the ‘must keep doing’ urge. I think that that urge is baked into our brains as young people in this capitalist world, and so it’s hard to take our time with anything, especially something we are just doing for fun and not some external achievement (but a must if we are to stay calm and happy, I think). Here’s something else baked – banana bread, straight from the oven. It’s so squishy, slightly cinnamon-y, with juicy little sultana and date pieces, and I spread a little (vegan) butter on too, because I wanted to. Yum yum.
